Caribbean Cooking

Many of you won't believe this, but I've actually learned to cook. Recently a group of students took a cooking class and learned how to make some excellent local dishes. Shopping for food is more like foraging, since you have to go to about 7 places and only on certain days. I slowly collected the ingredients and I'm ready to recreate our meal. Here's what you will be treated to if you visit, or if we can unearth these ingredients back in the states:

Cinnamon Chicken with Plantains
Beans + Rice w/ Coconut Milk
Rasta Pasta w/ pumpkin sauce
Christophene and Caraway Butter
Mango Coconut Bread Pudding w/ Rum Sauce

I even made up my own mexican night!
Homemade Guacamole from fresh avocados + lime :)
Jerk Chicken Quesadillas

When you get tired of studying and you're hungry ya get pretty hyped up about food. Plus my roomie in KY sent me a bunch of muffin mixes so I can make those when I get all baking-crazy! I'm working on learning to do fish next.

The CDC would seize upon evaluating this place. Some grocery stores TURN OFF THE POWER in the evenings. Ick. But I'm getting to know the produce and egg vendors so I can get decent (and safe) food and I stick with the cleanest grocery store we've got.
